One Dish Thai Mango Chicken - Recipe
Preheat oven to 375 degrees
Ingredients
- 2 Chicken Thighs
- 4-5 carrots roughly chopped
- 4-5 yukon gold or red potatoes quartered
- Fedoras Thai Mango Vinaigrette
Directions
- Clean chicken and cut off excess fat. Salt and pepper the chicken
- Place the chicken in a glass dish, skin side up. Drizzle with Fedora Thai Mango and coat the chicken to ensure vinaigrette gets on the bottom of the chicken thighs. Add the carrots and potatoes to the glass dish.
- Place in the oven for 30 minutes
- After 15 minutes, pull out and stir up the vegetables. Don’t do anything to the chicken.
- Cook another 12 - 15 minutes until skin reaches desired browning.
